For those of you whose New-years-resolution involves better eating, here our delicious and super easy healthy recipe – ideal for lunch or dinner: Cauliflower Rosti with Guacamole and a poached egg.


  • 1 medium sized cauliflower
  • 1-2 eggs
  • salt / pepper / nutmeg

Mix all the ingredients together. Heat some coconut oil in a pan and place one spoon per Rosti in the pan and press slightly down into a round shape. Turn it over after about 3 min (when slightly brown) and cook also 3 min from the other side.


  • 1 large or two small avocados
  • lemon juice
  • fresh coriander
  • salt / pepper
  • (if you like add tomatoes as well)

Cut the Avocado in half, take the seed out and spoon the flesh into a small bowl. Mash it up with a fork and add salt, pepper, lemon juice and coriander and mix well

Place the Rosti on the plate, cover with Guacamole and place the poached egg on top. DONE!

You can also eat the Rosti with a herb yogurt and fresh baby spinach. I am sure smoked salmon would taste delicious with it as well.
