Brownie

Recipe

ingredients:
- 1 cup cooked quinoa
- 1,5 cups plain sweet potato mash
- 2 big bananas
- 2 eggs
- 1/4 cup coconut oil (melted)
- 1/4 cup almond milk (add more if you have to)
- 1 tbsp of raw honey
- 1 cup brown rice flour
- 2 cups ground almonds
- 1 tbsp ground flaxseed
- 1/2 cup of buckwheat flakes
- 2-3 tbsp raw cacao powder
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
(I think that was all)
Directions:
- Mix all the dry ingredients together in a bowl - and all the dry ones in another. Add the dry ingredients slowly to the wet and stir well until everything is combined.
- Line a square baking form with parchment paper and spread the dough evenly in it.
• Bake at 180 degrees Celsius for about 30-40min. Do the test with a little wooden skewer…
For the icing I blended:
- 1 big avocado (or 2 smaller ones)
- 1 big banana
- 1 tsp vanilla essence
- 2 tbsp raw cacao powder
and spread the chocolate mousse over the cooled Brownies.
