Brownie

ingredients:

  • 1 cup cooked quinoa
  • 1,5 cups plain sweet potato mash
  • 2 big bananas
  • 2 eggs
  • 1/4 cup coconut oil (melted)
  • 1/4 cup almond milk (add more if you have to)
  • 1 tbsp of raw honey
  • 1 cup brown rice flour
  • 2 cups ground almonds
  • 1 tbsp ground flaxseed
  • 1/2 cup of buckwheat flakes
  • 2-3 tbsp raw cacao powder
  • 1 tsp baking powder
  • 1 tsp bicarbonate of soda
    (I think that was all)

 

Directions:

  • Mix all the dry ingredients together in a bowl - and all the dry ones in another. Add the dry ingredients slowly to the wet and stir well until everything is combined.
  • Line a square baking form with parchment paper and spread the dough evenly in it.
    • Bake at 180 degrees Celsius for about 30-40min. Do the test with a little wooden skewer…

 

For the icing I blended:

  • 1 big avocado (or 2 smaller ones)
  • 1 big banana
  • 1 tsp vanilla essence
  • 2 tbsp raw cacao powder

and spread the chocolate mousse over the cooled Brownies.
